Why is Kontakt plugin in demo mode, standalone is fine and Access says its all registered.
Is your registered Kontakt version in N.A. also version 8 ?
Else then have you given ALL NI apps including NTKDaemon and DAW full disk access ? : How to Enable Full Disk Access on macOS
And If using Sequoia/Tahoe then if prompted to do so then N.I. apps and DAW must be added to the Local Network (Ref. : How to grant audio apps access to your local network on macOS 15 Sequoia).

Have you run the Kontatkt standalone app first ?
