When playing live and generate stems, cpu is going crazy. Is there any future update to solve the problem?

Stems right now is more of a preparation tool, not a live tool.

I have a red car and it doesn't go faster than 110 km/h. Why is that?
As you can see, it is quite inconvenient when you ask for help and provide zero information.
The function requires as much CPU power as you can provide.
Especially with mobile CPUs, they cannot match the performance of desktop CPUs; here the more the better.
If your CPU power is not enough, it is advisable to prepare your tracks beforehand.

My specs are : MacBook Pro (Retina, 15-inch, Mid 2015), 2,5 GHz Quad-Core Intel Core i7, 16 GB 1600 MHz DDR3.

This is not meant in a bad way and does not only apply to this forum; wherever you are looking for technical help you should also provide information.
But nobody here can guess what kind of hardware you have in order to estimate what the problem is.
Now that we know that you have an older Mobile CPU and the RAM is still DDR3, it is advisable that you convert your files beforehand.

It might also be good if Native Instruments tested what CPU power was needed to convert in live mode and then added the minimum requirement accordingly.

I think that in the official video of Traktor 4 says that we can generate stems while playing. Or I am wrong?

That's exactly why it would be good if they provided a minimum requirement for it, e.g. which generation of Intel core can do it in live operation, etc.
e.g. a core i3 cpu from 2024 will probably be considerably faster today than a core i7 which is already very old etc.
When the full performance is called upon you will notice the differences that you didn't notice before when playing music normally.

They do indeed say that. A bit weird since the stem separation uses so much CPU. I would not advice to do that.
Maybe it works better with modern hardware.

Just tested with TP4 Demo on my Mac Studio: Playing Stems on all 4 decks, creating a Stem while some other apps are still running (nothing fancy, Safari, Excel, Word, etc.). Plenty of ressources left. Load was between 30 and 60% overall. Traktor made use of about 6 cores. Still have to do tests on my MacBook Pro which I usually use for DJing but expect similar results with its M3 Max.

So far the bottleneck for me isn’t the CPU, it’s the memory. I have a MacBook Air M1, 8gb, and only converting stems one after the other, I get the memory pressure to level 2, paging starts and I get audio dropouts. There also seems to be a memory leak, as the memory used by Traktor in Activity Monitor keeps getting bigger and doesn’t come down once the stems are done.
Ultimately, no big deal, but you want to be cautious about converting to stems while playing, as the only way to shrink Traktor memory use back down is to relaunch it.
CPU use is very reasonable and well throttled, I had zero issues with it.

Another thing that I noticed is that when you cut vocals, etc. from stems, when you load another track, it isn't reset the channel.

No software update can solve this. You are using 9 year old hardware and Mac CPU power has increased a lot since then. Fast stem separation needs modern hardware and those requirements will only go up if we want better real time stem quality. But at least with Traktor you are actually still able to use your old hardware with stems, just generate those stems ahead of time.

There is a good reason why it isn't filled automatically, or why it isn't relevant at all. The information filled in there is most likely outdated.
Also, consider this: You go to the doctor, and you say that you have pain the leg. Wouldn't you think he'd want to specify where and what exactly the problem is?
