Why does it save every update as a new program

They're saved in case there's a problem with an updated version. Saving them means you can run the older version.

Traktor also saves a lot of collection files and the beatgrid for old versions.

I think on mac you can find those on User > *Your Username* > Documents > Native Instruments > Traktor x.x.x 

If you are running low on disk you might be able to delete the old version folders. Just to be sure, maybe just move them and see that everything is running as it should. Then delete.
