How much memory does your Mac have?
In one of your screen shots...I can't read French, but I see a lot of non-music related tasks eating up memory. If you have low RAM to begin with, you might want to shut down that stuff that has nothing to do with music, such as all the Safari tasks and probably that Google one too.

What @BIF said above.
You can not seriously expect to make music with 20 Kontakt instances while you have open a ton of completely irrelevant stuff. On any computer. No matter how much RAM you have. When we seriously want to make music, and not just having fun with few loops, everything else has to be closed.
@Milos, 20 tracks are not really much. Usually i use 30-40 for a simple trance track... 8-16 are just for the drums/percussion stuff... i know some well known artists of the scene, using up to 120 or more! :-)

You have 20 tracks but it shows Logic alone is consuming over 15GB of memory so those tracks must have some hefty sample based instruments.
Def what has been suggested, close anything not related to what you are doing but also consider the instruments you are loading and if you need them. For instance, some NI drum kits could be 8GB of samples alone where something like using Toon Tracks or Addictive Drummer (or similar) could yield just as good (IMO better) drum kit sound for 1/5 of the memory.
Def pays to know what your system is doing and since you opened the process manager, that gives you a clear view of what is consuming your memory.

20 Tracks?
Are you composing for an orchestra or a big band or something?

Thank you for your answer, I have 32 Giga of Ram and it is true that I left quite a few internet windows active but I did not think that with such a machine worth $3700 I would have to having to close all the other tasks to have to do musical composition.

For example Stradivari may take about 5 GB RAM, if using multimic patch.... Half of it if ordinary one....
32 GB RAM is not that much, considering it is also shared with GPU that takes few GB....
And your open non-music apps take according your screenshot several GB of RAM.
So, GPU and non-music apps might consume about one third of your RAM in given example.

You said it quite well, I was just about to mention the same. I've had 64GB in my PC's for awhile, but the unified memory in the Apple ARM silicon changes things quite a bit.

It is possible to live with 32 GB of RAM even if memory is shared with iGPU. But one has to use RAM with care.
If OP has about 20 GB of RAM available for music creation (in given case) and uses multimic Stradivari patch, quarter of RAM available is used just by Stradivari....
