How do I access old verses?
for example the first version of Traktor 3.

unlike serato which maintains a page with all released versions.
I would like to have the version 3.0 installer
If you need previous versions installers (of any NI current product), you must contact support and ask them to provide it to you.
Last version available without having to ask them is 2.11.2 from 2017, on this page

If you hadn't been quite so obnoxious, LostInFoundation might have told you that they're the same installers...
Actually, no, they are not full installers. You can see it clearly from their size, all between 30 and 75 megabytes, while a full Traktor installation is around 500, at least.
