How do I assign a VST to a track in Dorico?

I just bought the Symphony VST library from Kontakt (Player 8) but when I assign flute, oboe, then clarinet, for example, in Dorico all I get is clarinets. And they play on all tracks, even if I have them on mute. I’m sure I’m missing something obvious. Can anyone enlighten me as to what I’m doing wrong?

The Symphony Series comes in two flavors. One is a limited library, the other is the full library. In the full library there are two woodwind libraries, Ensemble and Solo. In the Ensemble library it's broken up into various instruments and articulations. There is also a self contained single Woodwind Ensemble.nki which contains all the various woodwind instruments played in an ensemble setup allocated into different areas of the keyboard, but limited into different ranges. Without knowing which library you purchased it's hard to help in giving you any real guidance since I have no familiarity with Dorico, but the concepts should be consistent regardless of the DAW.
If you're working with the Woodwind Ensemble you would need to assign the full instruments such as Oboes or Clarinets into their own tracks in your DAW to play both libraries together. Otherwise you would load the Woodwind Ensemble.nki to have all of them available simultaneously in a single track.

I think that you can get more information on the problem here (including screenshots)(I think that that is also dons).
