How to transfer to a new computer
My existing Imac is being replaced. I need to decide on the size of SSD drive I need. Can you confirm that I can install and uninstall the VSTs using Native Access as I need them and not have to have them dumped on my SSD all the time? I want to buy an Imac with 512GB SSD and have no other large sofware sat on the disc.

install and uninstall the VSTs using Native Access as I need them
You ought to be able to install what components that you want and not install / uninstall what you do not use. However it is advisable that you keep the apps and the VST / AU / AAX on the system drive and only install the Content (libraries and expansions) to other drive.
and not have to have them dumped on my SSD all the time?
I do not know what that means other than if that measn installed on drive which that you do not need all the rime.
latest version of Native Access for your OS
Install
You should be able to click the three little dots right to the install options and there select Locate ,reference : Reinstalling a Komplete Bundle Without Re-Downloading Kontakt Libraries
Move / copy
Moving a Native Instruments Product to Another Location on Your Computer
Using the Repair / Relocate All Function in Native Access
ALL NI apps including NTKDaemon must have full disk access. : How to Enable Full Disk Access on macOS and disks must be of correct format : Notes on Network Drives and Disk Formats
Also then please check that iCloud Private Relay has been turned off : NativeAccess Error Message: "Download failed" (macOS)

Depending on the size of the libraries you own, and other content you'll have on your drive, a 512GB internal is not that large. It does OK with care though, (I know I have one)
I would recommend downloading larger libraries one at a time, as the OS needs lots of internal drive space in the installation process. Id also recommend keeping plenty of free space on that drive. I wouldnt go less than 30% free. If you use an external as I do, for the libraries, it takes a lot of load off the system drive. With that strategy I personally have been able to keep my Mac drive with well over 1/2 free.
