On Cubase, in editing instruments, I cannot find in Noire or Ethereal Earth Kontakt Player displays, any place to change the midi channel like I find in other instruments displays like Scarbee Mark I or Session Horns.

That is for the independent audio channels.

For MIDI ones, play around with MIDI channel button right below the Output.

    Hmm...

I think you can do this instead:

Go to the View, then Outputs.

Then reopen your instruments, click on the information button beside the photo button inside all of your instruments.

Now what you need to do is to click on the Output below the name of the instruments and then click on 'create separate master output channel' on each of your instruments.

    There you go.

Now each channel is independent, effect-wise and audio-wise.

You have to click the I at the top next to the camera (snapshot) button, then you can see the midi channel. Then click the camera again to go back to snapshot selection. Most kontakt instruments default showing this, but in Noire you have to click the i to see it.
