According to the video I just watched, Session Percussionist only supports six different tempos in the patches it creates. Is that true, and how do we manage a BPM that's out of range of those six tempos?

as far as I know session percussionist of course sets the tempo according to the master tempo from your DAW or from kontakt itself stand alone or even within your DAW if you want (disable host tempo). Then there is half and double tempo and different note durations. Maybe you can describe a little bit further what you mean exactly
P.S. for this library tempo just means trigger tempo or trigger distance, so the sounds stay the same and are just triggered differently, so there should be no limit like you described.
whereas with libraries that have recorded phrases, where a tempo change means to stretch that sampled phrases there is a useful area/limit depending on the stretch algorithm if you want a good and useful sound
