Running the MK3 keyboard to control hardware only.

Interested in this keyboard but only will use it to control hardware midi equipment. If I program this with all my CC assignments in the Kontrol Software, will it save to the keyboard and can I just run it without using the Komplete software on my Mac? Just plug it in via USB?

There's a built in midi template editor you can use for this on the device, it's not done in Komplete Kontrol software. Maybe it's worth watching some YouTube videos about the midi template browser / editor

How to use MIDI templates here - if you are using hardware you can ignore Komplete Kontrol completely and just use the MIDI templates, Play Assist and MIDI DIN output
