Logic projects migration from Kontakt 7 to 8 ?
Hi everyone, I’m wondering: if I install Kontakt 8 and uninstall Kontakt 7, will my previous Logic projects automatically detect and replace Kontakt 7 with Kontakt 8?

Nope. They won't.
Speaking from experience…
When I had my previous projects with K6 Player, and then when I installed the 7th version, Cakewalk couldnt replace the plugin with the K7, But when I installed the 8th version few years later, Cakewalk couldnt do that either.
However, I have an advice for you.
Before installing K8, write down on your paper or notes which instruments and samples are on your projects, then install K8 and then delete the tracks that contain K7, replace them with k8 and then insert the instruments and samples you wrote down on paper (in case you forget)

You can only replace them manually, your DAW can't do that automatically, sadly.

Some DAWS can - maybe Cakewalk is one of the ones that can't, Live is too, but I think Cubase can, and as said so can Logic. Kontakt itself supports it but the DAW needs to as well for migration to work
