Layering instruments in Kontrol S-Series MK3 by mistake

I am a newbie to Kontrol S-Series MK3 - running Ableton Live 12, when trying to choose an instrument on a channel in Live, I'm layering sounds/instruments by accident, I can't work out how i'm doing it and how to stop?

i.e. when I press a key, two sounds/instruments are playing.

    Perhaps you have two Ableton tracks record enabled / armed simultaneously? Press the red record/circle button at the bottom of the track to turn it on or off per track.
