What do you consider medieval fantasy?

If you are going based off movies, big strings/horns are what is commonly used along with some plucked instruments, many would consider "ethnic" instruments to be the go to sounds and it can help to do some research on movies or shows where you hear what you like, for instance Game of Thrones has some pretty good compositions which you may consider along the lines and knowing what instruments are used gives you a start on what to look for

I don't know that there are many Ethnic instruments in the NI suite as most of that kind of stuff I would look at UVI who have a good range but depends if you are after bowed or plucked strings, woodwind, percussion sounds or the whole gambit.

Dulcimer. DIdn't that sound great. Just sample it if NI doesnt give you what you want.
