All Kontakt 6 wallpapers missing

I recently upgraded from Mojave to Catalina but decided to go back to Mojave.
Although the downgrade was successful Kontakt is fine in stand-alone but
in Cubase, it seems to have lost all its wallpapers (artwork). The
instruments are there but no wallpapers. (In Cubase)

Seems you have much bigger issues than just the graphics. Whole libraries are missing here.

You will need to use Native Access to "locate" all the existing libraries to set all this metadata back to normal.

IMPORTANT: this looks like Kontakt 6 in your screencap so be very careful if you are considering downloading any "updates" for any Kontakt library from within Native Access.

Any K library that says "Update" will only be usable within Kontakt 7.6.x and if you install any of these updates - all your prior projects could get trashed as these libraries will not open in K6

Everything is OK in Kontakt 5 but not 6? Kontakt 5 on the right of screen

Not sure what to tell you on this one since both Kontakt 5 and 6 are now retired and unsupported.

You might consider trying to ask NI support on this but it may be a long shot.
