I use typical sustain pedal for, well, sustain.
As for the dynamics, I use in-DAW midi and effect automation instead of dynamic pedals.
Automation is one of the best things for not only mixing or microdynamics, but it is also useful to create a more creative alternatives for typical trance gate.
