Does Kontakt 8 work (without problems) in Logic 11 without opening Logic with Rosetta?

  Yes it does - it's Apple Silicon native (and even if it wasn't you should almost never need to open Logic itself in Rosetta mode for non native plugins as the AU compatibility layer allows any non native AU to load )
