Never mind, I figured it out myself. I increased the tone color in the Kontakt Player interface, and I can add the sustain pedal effect in a MIDI editor software.0

No entirely clear what you're trying to do. A piano MIDI file will already contain velocity and sustain pedal data. A few more details?
