NI Access shows all my libraries, yet Kontakt 7 doesn't recognize them and Kontakt Player shows them as "Demo".

Have you been using CleanMyMac ? If you have then you might have to reinstall problem products : Do not use Clean My Mac.
Else then ALL NI apps including NTKDaemon must have fulldisk access. : How to Enable Full Disk Access on macOS and disks must be of correct format : Notes on Network Drives and Disk Formats
Else you can try reinitialize the KONTAKT Database
