Sounds disappear.

I am primarily a piano teacher and I use an S88 mk3 playing Grandeur to demonstrate to my students. Since Kontakt 8, if I don’t play for a few minutes, the sustain portion of the notes disappear for about 5 seconds, leaving the attack and release portion. As I play my data drive starts up but there is the delay. Any ideas? I’ve just changed my data drive to a LaCie d2, 8Tb.

Yes, if you installed libraries on an external hard drive formatted to ExFat you'll need to reformat the drive to APFS.

What's the format of the external hard drive? It should be APFS, as explained here: Notes on Hard Drive Formats on Mac Computers

Do Kontakt, Komplete Kontrol and Kontakt 8 all have full disk access? How to Enable Full Disk Access on macOS

my system drive is AFPS but my Lacie data drive is exFat. Will I need to reformat my data drive then reinstall Komplete? I switched the settings to allow Kontakt, compete contral and Logic to have full disk access.
