AWG24/2C USB Cable for Komplete Kontrol S61?
Where do you even find this specific kind of cable in USB C to USB B form?
I bought the Cable Matters C to B off Amazon but I don't think it matches NI's specs. Is it safe to use still or where do you find a USB C to B with the specs that NI wants?

Nope, It’ll be here tomorrow and I can try it then. I just figured NI has a reason for it being so specific so I didn’t want to mess something up on this expensive stuff by something as small as “wrong gauge wire and conductor count.”

Usually because that is what is tested and recommended.
It helps to know what the actual numbers in the cable rating actually mean and that will help you get a better idea. The numbers are always written on the cable, if not then you have a cheap cable that may/may not work.
First qustion is usually "can I damage my device" and typically, no you won't damage it using the wrong "spec" cable, USB is a standard and the same 4 wires do the same task on every cable.
The rating is in reference to the wire diameter and also the power rating of the cable so the wrong cable will usually not have the power delivery capability and while your keyboard may power up it could reboot, drop out or just power off at some point.
