How to activate the custom MIDI controls on Kontrol S61 mk3

I can see the Default MIDI template screen popping up sometimes, but it disappears when the DAW button is pressed. Pressing down SHIFT and then PLUG-IN does nothing. How do I do custom mappings on this MIDI controller?
